🥩 Mini Carnivore Meatloaf Loaves
Stovetop + Fridge + Microwave | No Oven Required
Yield: 6–8 Mini Loaves
Prep Time: 10 Minutes | Cook Time: 20 Minutes
Chill Time: 1–2 Hours

Simple, comforting, and packed with protein.
If you've spent any time on the blog lately, you've probably noticed a trend: a lot of my recipes don't use an oven. That's not exactly by choice. Right now, I'm working around an oven that isn't operational, which has pushed me to get creative with stovetop meals, fridge-set recipes, and freezer-friendly treats.
These Mini Carnivore Meatloaf Loaves are a perfect example. They deliver all the comfort of traditional meatloaf in an easy, meal-prep-friendly format without ever turning on the oven.
While I'm looking forward to sharing more baked recipes once my oven is working again, this season has been a good reminder that delicious food doesn't require perfect circumstances—just a little creativity and a willingness to work with what you have. ❤️🥩
Ingredients
2 lbs ground beef
4 oz cream cheese, softened
2 eggs
1 tsp salt
Optional: ½ cup shredded cheese
Optional: 1–2 tbsp butter
Instructions
Step 1: Grease the Mold
Lightly grease your silicone loaf mold with ghee spray or butter.
Step 2: Brown the Beef
Add the ground beef to a large skillet over medium heat.
Cook until fully browned, breaking it apart as it cooks.
Step 3: Add the Cream Cheese
Lower the heat.
Cut the cream cheese into cubes and add it to the hot beef.
Stir until melted and creamy.
Step 4: Cool Slightly
Remove the skillet from heat.
Let the mixture cool for about 5 minutes so the eggs do not scramble.
Step 5: Add the Eggs
Beat the eggs in a small bowl.
Stir them into the beef mixture until fully combined.
Step 6: Cook Until Set
Return the skillet to low heat.
Stir gently for 2–4 minutes, just until the eggs are cooked into the mixture and everything thickens.
Step 7: Fill the Mold
Spoon the mixture evenly into the silicone loaf cavities.
Press each one down gently so they hold their shape.
Step 8: Chill
Place the mold in the refrigerator for 1–2 hours, or until firm.
For a faster set, freeze for 30–45 minutes.
Step 9: Remove and Serve
Pop the mini loaves out of the mold.
Enjoy cold, or microwave until warm.
Top with butter or shredded cheese if desired.
