Tried this recipe for breakfast this morning and it was phenomenal! What I ended up doing was scrambling the eggs until they were roughly 75% cooked before adding the cottage cheese. Once the cottage cheese was incorporated it looked really mushy still so I let the eggs and cottage cheese simmer to burn off most of the liquid, continuing to stir the entire time. This did not end up over cooking the eggs and gave the final product the texture of scrambled eggs with the creaminess of the cottage cheese. The creamy cheese flavor really popped and brought a whole new level to scrambled eggs. I will definitely continue making this for breakfast often! Thank you for sharing!
